Biscuit moelleux "Le Toinou"
Traditional production of the Toinou biscuit in Saint-Yrieix-sous-Aixe. Toinou is a speciality of the Limousin. It is a cake, a soft cake to be exact. According to the legend, it comes from the uncle called "Le Toinou" who liked to taste his wife's recipes made with local ingredients. Chestnuts, hazelnuts, walnuts and almonds, all mixed together, giving the softness and flavour that his uncle loved.
A variation of this soft biscuit in different flavours:

- Cherries/almonds
We also make gingerbread, shortbread (Crousty shortbread in different flavours), savoury cakes with salmon, olives and peppers and jams.

Sales to individuals in the regional product sections of certain supermarkets and small shops: Super U in Aixe-sur-Vienne, Carrefour City on Avenue des Ruchoux and on the many traditional or occasional markets in Haute-Vienne.
